DRAUGHT - Original Series - 1340
Light yellow-gold color with a tightly packed white head, floral nose with a hint of malt, medium bodied palate with delicate hopping and a slightly bitter finish. The most discerning draught drinker will appreciate this beer.

INDIA PALE ALE - Brewmaster Selection Series - 1342
Early records of "Cooper and Sons" producing India Pale Ale can be found in the South Australian Advertiser, dated February 1868. Thomas Coopers IPA (India Pale Ale) produces a beer with all the hallmarks of a genuine IPA from the "mother land". A strong ale with robust malt characters and very high hopping levels.

IRISH STOUT - Brewmaster Selection Series - 1344
A rich, dark brew displaying coffee, chocolate and licorice aromatics, roasty bitter notes with a dry finish. Thomas Coopers Irish Stout is an authentic recipe containing a blend of malted barley, roasted barley, flaked barley and hops. The pour will show a turbulent, cascading tan foaming action. Eventually, this settles into a creamy beige colored head that rests atop the beer.

LAGER - Original Series - 1345
Straw color with golden hues and a lacy white head. Light floral aromas follow through on a light to medium bodied palate with subtle malt and hop flavors and a clean finish. An Australian Lager style with plenty of character.

PILSENER - Brewmaster Selection Series - 1349
A pale straw colored beer with a bold, spicy Saaz hop aroma. Crisp and dry with cleansing bitterness, Thomas Coopers Pilsener is made from premium 2- row pale malt and barley, bittering hops and a generous amount of aromatic SAAZ hops. Fermentation with the true lager yeast, supplied, at temperatures below 20C will produce an excellent example of the pilsener style.

REAL ALE - Original Series - 1350
Bright golden color with a strong head. Pleasant blend of fruit and malt on the nose with generous mouthfeel and a moderately bitter finish. A good example of a Coopers' Traditional Ale.

AUSTRALIAN PALE ALE - International Series - 1362
Due to popular demand our master brewers have developed a beer concentrate in the style of the famous COOPERS ORIGINAL PALE ALE which is considered an Australian icon. The finest 2-row barley, hops and specially selected yeast combine to produce a beer with fruity and floral characters, balanced with a crisp bitterness and compelling flavor perfect for every occasion.

EUROPEAN (BAVARIAN) LAGER - International Series - 1364
Straw color with golden hues and a lacy white head. Slightly sulphur nose (dissipates with further bottle conditioning-'lager' means 'to store'), light in body and a subtle hint of malt, appropriate bitterness promotes a clean finish. A true European style lager.

CANADIAN BLONDE - International Series - 1366
Pale straw color. Crisp pale malt aromas with a hint of spicy hops, clean pale malt flavors and a light-bodied palate that finishes with obvious hop bitterness. Perfect for summer drinking.

MEXICAN CERVEZA - International Series - 1368
Mexico is known for its arid lands, dusty conditions and oppressive heat. So it’s not surprising that the people of Mexico are expert at quenching a thirst. Coopers Mexican Cerveza (beer) emulates the style of the finest quality beers exported from Mexico. This premium beer is light in style with a fresh clean taste, ideally served ice-cold with a wedge of lime or lemon.

The Muntons Premium range was developed for the original four kits in the early days of English home-brewing. Formulations for this range have purposely not been changed since they were first developed back in the early 1970's - a tremendous heritage and a proven track record. The Premium range allows home beer makers to experience flavours from around the world in their own homes, enjoyably and economically. Once again the Muntons Premium range is made entirley from 100% hopped malt extract with no inferior or cheap adjuncts such as barley syrup. There is one notable exception to this however - the American Style Light Beer. To emulate the light delicate character of this popular beer style it was necessary to include in the kit a percentage of liquid sugar. This is the only beer kit in the extensive Muntons ranges made from anything other than 100% hopped malt extract. Many years ago - centuries in fact - it was discovered that the way to brew the best ales and beers was to use only malt, hops, water and yeast in the brewing process. In the 15th Century in Germany this was taken a stage further with the introduction of the "Reinheitsgebot" - a law prohibiting the use of any ingredients in the brewing process other than these raw materials.

This law stood until only a few years ago when the EEC over-ruled the "Reinheitsgebot" which they considered to be a barrier to free-trade within Europe! In spite of this the breweries have refused to change their recipes and still brew using only the four magic ingredients - their customers would not be satisfied with anything less, they tell us.

Traditional English ales were brewed originally without hops but tastes change once hops from the Continent were introduced keeping the ale fresh for longer. Beer drinkers gradually developed a taste for the new "hopped ales" and in the 15th Century the modern tasting English ale was borne. More recently, economic pressure has forced many breweries to introduce cheaper adjuncts into the brewing process. Purists will argue however that the beer quality has suffered because of this and that it is far better to stick to the traditional practices. We at Muntons agree, which is why the Gold Range was developed, a range designed simply to make great beer.

CONTINENTAL PILSNER 1718
Continental Pilsner - Continental Pilsner embodies the full character of European lager style beers - light and delicate, yet richly satisfying. This beer preserves the delicate balance of natural hop bitterness with the sweetness of malt and is best served cold at about 5°C or 41°F. Typical analyses when canned: Color (EBC Units) 5 - 7. Bitterness (EBU's) 27 - 33. Solids (by refractometer) 80% - 82%. Acidity (as lactic) 1% max. pH 5 - 6. Free Amino Nitrogen 0.15%.

OLD ENGLISH BITTER 1720
Old English Bitter - This fine Old English beer rekindles the full bodied, rich ales of Victorian Britain. Enjoyed best when served at cellar temperature - 13°C, 56°F. This quality beer combines premium brewing malt and the choicest hops, to follow a centuries old tradition of fine brewing. In keeping with this tradition, you can now recreate the taste enjoyed by Victorian England, with this excellent Old English Bitter - a taste which improves and matures with age, if you can bear to store a few bottles for six months or so! Typical analyses when canned: Color (EBC Units) 27 - 33. Bitterness (EBU's) 45 - 55. Solids (by refractometer) 80% - 82%. Acidity (as lactic) 1% max. pH 5 - 6. Free Amino Nitrogen 0.15%.

DOCKLANDS PORTER 1722
Docklands Porter - At the end of the 19th century a beer was brewed especially for the dockyard workers of the bustling Port of London. Docklands Porter was named after these strong men, who unloaded the cargoes of sailing ships and schooners birthed at the many wharves along the Thames. Porter had a uniquely rich and satisfying flavor which quenched the thirst of dockers after long shifts loading and unloading vessels from around the world. You can now recapture the unique flavor of traditional Victorian Porters - a light hop character and full malt flavor under lie a rich color, possible by the subtle use of the best roasted malts. Typical analyses when canned: Color (EBC Units) 90 - 100. Bitterness (EBU's) 17 - 23. Solids (by refractometer) 80% - 82%. Acidity (as lactic) 1% max. pH 5 - 6. Free Amino Nitrogen 0.15%.

IMPERIAL STOUT 1724
Imperial Stout - As Imperial Russia extended its territories into the Baltic States during the early 1780's, Catherine the Great, Empress of all the Russians fell in love with strong British Stout. Imperial Stout captures the essence of this truly classic beer, with its full body, rich black color and distinctive dry bitterness. Capped by a smooth, creamy head, it is a brew to be savored, and enjoyed at its best when served chilled - approximately 5°C or 41°F. Typical analyses when canned: Color (EBC Units) 225 - 275. Bitterness (EBU's) 50 - 60. Solids (by refractometer) 80% - 82%. Acidity (as lactic) 1% max. pH 5 - 6. Free Amino Nitrogen 0.15%.

HIGHLAND HEAVY ALE 1726
Highland Heavy Ale - In the Highlands of Scotland, centuries ago, small breweries began producing rich, dark, hoppy ales know locally as "Heavy". In addition "Light" beers were also brewed, known south of the border as Milds, but it was a pint of "Heavy" which typified the highlanders' preference. You can now recapture this distinctive rich bitter flavor, with its dark, malty brew, balanced by a generous helping of hops. To enjoy Highland Heavy Ale at its best it should be served at cellar temperature. Typical analyses when canned: Color (EBC Units) 50 - 60. Bitterness (EBU's) 45 - 55. Solids (by refractometer) 80% - 82%. Acidity (as lactic) 1% max. pH 5 - 6. Free Amino Nitrogen 0.15%.

INDIA PALE ALE 1728
India Pale Ale - Keeping the British troops supplied with fresh beer out in the British East Indies proved to be a problem during the 19th Century. The lengthy journey by sailing ship caused the beers to spoil and a special brew therefore had to be supplied - India Pale Ale. This was brewed to a high alcoholic strength to keep bacteria at bay during the voyage. Upon arrival the beer was watered down to normal pub strength for the troops. Of course the officers had access to the non-diluted version! However you have a choice. Recreate India Pale Ale, brewed to the Troops Tipple at approximately 1041° strength or the Higher Ranks Reserve version in its higher strength form. Typical analyses when canned: Color (EBC Units) 22 - 28. Bitterness (EBU's) 17 - 23. Solids (by refractometer) 80% - 82%. Acidity (as lactic) 1% max. pH 5 - 6. Free Amino Nitrogen 0.15%.

Simple Instructions

1. Clean and sterilize all equipment. Remove label and stand can(s) in hot water for 5 minutes to soften contents. Pour the contents into the sterilized fermenter.

2. Add 3.5 liters (6 UK pints) boiling water. Add 16.5 liters (29 UK pints) of cold water to bring the volume up to 23 liters (40 UK pints, 6 US Gallons) and thoroughly mix to make sure all the contents are fully dissolved.

3. Add the yeast, cover the fermenter and leave to stand for 4-6 days in a warm place (between 18-20 C, 65-70 F). Fermentation will be finished when the bubbles cease to rise (if you use a hydrometer, when the gravity remains constant below 1014°).

4. Transfer the beer into bottles or a pressure barrel and add half a teaspoon of Light Spray malt per pint to each bottle, or a maximum of 85 grams (3oz) per 5 UK gallon pressure barrel. Sugar may be used instead. Stand bottles or barrel in a warm place for 2 days then allow 14 days in a cool place or until the beer has cleared.

Sugar: This kit does not require the addition of any sugar other than for priming. Light Spray malt may be used instead of sugar for priming which will ensure that your beer complies strictly with the 15th Century purity law, the "Reinheitsgebot".
