I am brewing my 4th, 5th, and 6th batches of Pilsener. I bought one kit to use as a reference, then I bought different grains and hops to try to come up with my own recipe for a smooth Pilsener. The it came with S-23, so I bought additional S-23 for my other variations. While it was fermenting, I read several reviews that were all over the place. No consistency in the reviews. Some said higher temps gave the beer a tutie frutie flavor. Others said lower temps did it. It had me concerned, and most people said they liked the Saflager 34/70 better. Thought I was gonna have three bad batches. The kit had an OG of 1.046 and finished up at 1.010 after 15 days. The other batches using my own recipe's came in at 1.053 OG and finished right at 1.013. I transferred all three this weekend for lagering and when I took the FG, they all tasted great. No off flavors, no fruitiness. Fermented in my spare temperature controlled fridge at 58 degrees according to recommendations on the pack. Dry pitched according to instructions as well. I may try the S-34/70 on subsequent batches, but the S-23 did a good job, great attenuation and no off flavors. Then again, I have an accurate temperature control system and high quality sensing. Many people may b using cheap thermometers which can have as bad as a +/- 10% accuracy, which may make a difference. ?????? All I know is it was the first time I used S-23 and it worked great for me.
