Cutting Edge Starter Culture for fresh vegetables is a mixture of lactic bacteria that are used in vegetable fermentation. Each box comes with 6 packages of starter culture, each able to prepare 5 lbs of raw vegetables. The box also contains a set of instructions on how to use the cultures, an explanation of ideal factors for use, such as temperature, salt and water, and a list of frequently asked questions. The cultures are lactose-free and vegan, using organic tapioca sugar as a carrier for cultures of Lactobacillus plantarum, Leuconostoc mesenteroides, and Pediococcus acidilactici.
